The thing it hasn't provided for is excess and the moment excess comes in the realities are forgotten. So with this point in view of mine and always thinking a little bit about the future, about how are we going to wake up tomorrow. Whether we can get rid of some of the problems that have annoyed us for so long. Let us remember that to begin with, we must search in ourselves and wherever we find a false value, wherever we make a decision that cannot be reasonably and constructively demonstrated, wherever we have to gain our end by breaking the Golden Rule, wherever we have to satisfy our natures by condemning someone else. By the time we get through admiring the wonders of things, as they are we will be inclined to get over the disillusionments which we suffer, is the result of things as they appear to be. text-align: left;"><span style="font-size: medium;"><br /></span></div><span style="font-size: medium;"><br /></span><p><span style="font-size: medium;"><br /></span></p><p><br /></p>All is Onehttp://www.blogger.com/profile/10321454216537147434noreply@blogger.com0tag:blogger.com,1999:blog-4855778566788380642.post-58977386551401081032024-03-11T16:43:00.000-04:002024-03-11T16:43:34.654-04:0016岁,花一样的年纪<p> 昨天,Pearl终于盼来了她期待已久的16岁生日。对她来说,16岁是可以开始做很多新鲜事物的年龄。她终于可以正式开始学习驾驶汽车;也多了很多工作的选择(因为大部分part time工作都只招收16岁以上的)等等。一切都是那么新鲜又让人期待。</p><p>现在外面餐馆,感觉值得出去搓一顿的,越来越少了。价格越来越贵,东西大部分还没有我自己做的好吃。所以,去了还算值得去的Hana吃了顿午餐的寿司自助。几年前一个人$10的午餐自助,现在已涨成了$20一人。昨天人特别多,感觉东西也太好吃。去餐馆吃饭最怕遇见的就是他们特别忙的时候,因为太忙,出餐速度和质量都大大地打了折扣。</p><p>不过其他都无所谓,一家人还有朋友们聚在一起开开心心才最重要。</p><div class="separator" style="clear: both; margin-right: 1em;"><img border="0" data-original-height="426" data-original-width="640" height="424" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg1pfKfg4diRBOxljLSdkgIB_WeYwYL6XTc1ypsT5xRYCSfCJaqoI9NAl5s_GJKMbQeK_WN6tor7j4ZJmOKyGPeFMlzeRo5uOr4tsIf9aXMK-WNK3UksLNk3IiLzlRyLhBxJGbpe-jnI-Cw_2o0fxcndtlJTdQsa1WNwD_PZaBPpZl7dOzGFbZTEd4geJk/w640-h424/magnolia-2218788_640.jpg" width="640" /></a></span></div><span style="font-family: georgia;">时隔5年,终于买了今年暑假回成都的机票,和我女儿两个人。接着又安排了6月中旬去日本玩一趟。所以这一两个月感觉买了好多次机票,而且也因为机票的各种问题,学习了很多新知识并且领悟了许多道理。</span><p></p><p><span style="font-family: georgia;"> 从哪里开始说起呢。。。因为我家在宾州乡下,所以坐飞机必须开车到附近的大城市,最近并且最方便的,就是新泽西的纽瓦克机场和费城机场了。但因为前几年疫情的原因,这些机场直飞中国的航班都被取消了。所以,现在的选择范围一下子就小了很多。也就是说,在不情愿,也得从我最不愿意去的纽约JFK机场出发。为什么最不愿意呢,因为开过去起码4个小时,再加上永远都在堵车,大部分时间得花5个小时到机场,再加上各种过路费,去一次过路费也需要40美金左右,反正就是各种不方便。接送我们的我先生,也会很辛苦。其实以前从美东回成都的选择就不多,现在不但更少,而且还特别贵。</span></p><p><span style="font-family: georgia;"> 还好,一月下旬,查机票的时候,在Expedia上找到了British Airways从纽瓦克机场出发,在伦敦和香港转机,到成都的航班。虽然时间比较长,但一个人往返$1600,6月1日出发,已经可以了,就下手买了它。这机票是只有一件23kg的托运行李额,多一件的话,是100美金。在平台买了票后,我去BA的网站上确认一下。可是在BA的预定管理那里,却没法显示甚至可能没有免费托运行李。这下,我就又开始不必要的担心了。马上联系Expedia的客服,客服再三保证没问题,第一件托运行李是免费的,而且如果真有问题,他们会补偿我托运行李的钱,等等。但我那沉迷于担忧的人类大脑,居然不相信人家客服,又去谷歌搜索Expedia卖的机票的类似情况。发现确实有人在Expedia买机票,说是有行李额,结果到了机场又说没有的情况。这下,我那爱无故担心的mind,又开始兴奋了,各种最坏的情况在脑海里预演着(其实后来想想,如果真是这样,最坏不就多给200美金而已,值得我这么焦虑吗。)当时是美国时间下午,BA的客服因为是英国时间,还没上班呢。可我那焦虑的心,完全失去了耐心,没法等到晚上再联系BA客服,而是听说BA在X上有官方账号,在那里可以24小时寻求帮助。所以,我就去X给留言了我那其实不是问题的问题。</span></p><p><span style="font-family: georgia;"> 过了一会儿,在我的留言下面有了让我用WhatsApp的链接和他联系的所谓BA客服。觉得有点奇怪,但还是联系了。可是开通语音通话后,发现对方说着我基本上听不太懂的印度英语。而且直接说让先退票。接着又让我去下载个什么转账的软件。这下觉得更不对劲了,怎么那么像骗子呢!直接就把语音通话给挂断了。然后去X上看那个回复,回复的头像看着和BA官方的一摸一样,但点进去,完全不是BA的账号,就一骗子账号。我也是因为过于焦虑,都快失去判断能力,还好当时语音通话的时候,我老公一听就不对劲,赶紧让我把电话给挂了。如果是平时,我根本都不会和这个骗子联系。在谷歌上一搜,发现这也是非常常见的骗术,还真有人因为机票出了问题被骗了钱。</span></p><p><span style="font-family: georgia;"> 这么一折腾,也到了晚上。BA英国那边的客服上班了。和客服开了个chat,给客服讲明情况,一查,他们的系统里显示我确实每个人有一件免费的托运行李额。这下,我那焦虑的心情,才逐渐平复下来。经历这件事后,发现自己真的很可笑,为了一件没有问题的事情焦虑了一整天,有种自己给自己添堵的感觉,还因为焦虑差点失去了正常的判断能力。突然觉得人怎么年纪越大,活得越不洒脱了呢。真的很需要反省。</span></p><p><span style="font-family: georgia;"> 回成都的机票就暂时告一段落。接着,因为一直想去日本看看,而且现在美元兑换日元的汇率已经到了将近1美元兑150日元。也就是说,现在去日本非常划算。而且,如果从成都去日本的话,机票很便宜,飞行时间也短了很多。所以,决定6月中旬和我女儿去趟日本。成都2020年那场疫情后,很多去日本的航班都没有了,连全日空的驻成都办公室都撤走了。查了一下机票,只有川航一个星期有3次直飞东京的航班,而且还贵。最后选了南航的转机时间不太离谱的航班,从东京进,然后从大阪出。2月16日买了我俩的机票,一个人的价格是$320,觉得挺便宜的。</span></p><p><span style="font-family: georgia;"> 过了10天,南航给我发了个航班变动邮件,把我回程从大阪出发到达成都天府机场,改成了到达双流机场。其实这是好事,因为双流机场比天府离家近了许多,更方便。本来想直接接受这个航变的,但手痒,又顺便查了一下同一航班的价格,发现机票降价了,$282一个人了。因为知道这种航空公司的航变,是可以免费退票和更改航班的,于是我就打电话到中国的南航服务中心,很顺利的就把票给退了。然后又重新买了更便宜的同一航班的票。虽然过了一个星期,同一航班又降到了$268一个人,买机票经常是买了后它就降价,反正也没法退票重买,接受吧,这个我倒没怎么纠结。</span></p><p><span style="font-family: georgia;"> 到目前为止听着一切都很顺利,而且结果都不错,对吧?但是,我那爱担心焦虑的人类大脑又开始作妖了。其实在退票之前,它就已经开始了。因为以前在南航因为航变也退过票,不过是在网站上直接操作就给退了。但这次,让我回复email申请退款,在网站上选退款还操作不了。觉得好麻烦,又担心靠email申请退款不靠谱。既然担心这么多,忍不住了,就直接打电话到了南航的人工客服,讲明了情况后,客服倒是很爽快地办了全额退款。这下,可以放心地买便宜机票了。但是,买了机票后,又开始莫名其妙的担心,万一客服不靠谱,最后钱没退给我,我不是买了两次一样的机票。反正脑子里就跟抽风似的,想象着各种最坏的结果。这下可好,要知道,人一旦开始担心焦虑,就会影响整个身体的能量,人会有一种能量被吸走的感觉,全身上下都很乏力,接着抵抗力就会开始下降。果然,第二天,突然有种要尿路感染的感觉,好多年没有犯过这病了。结果自己折腾自己,还真是把自己折腾病了。然后就又是好几天病痛的折磨。</span></p><p><span style="font-family: georgia;"> 果然没过几天,信用卡上就出现了南航退回的全部购票款。我真的是白担心,还把自己给折腾病了。经过这一次,我突然醒悟了许多。那天听了Eckhart Tolle一段讲解,对worrying这个问题的分析,很有共鸣,引用如下:</span></p><p><a class="youtube-marker" data-end="1254.23" data-start="1249.23" style="box-sizing: border-box;"><span style="font-family: georgia;">There are two types of unhappiness.</span></a></p><p><a class="youtube-marker" data-end="1254.23" data-start="1249.23" style="box-sizing: border-box;"><span style="font-family: georgia;">One is completely unrelated to an actual event out there.</span></a></p><span style="font-family: georgia;"><br style="box-sizing: border-box; caret-color: rgb(33, 37, 41); color: #212529;" /><br style="box-sizing: border-box; caret-color: rgb(33, 37, 41); color: #212529;" /><a class="youtube-marker" data-end="1533.11" data-start="1528.11" style="box-sizing: border-box;">So you have unhappiness arising simply<span style="color: #212529;"><span style="caret-color: rgb(33, 37, 41);"> </span></span></a><a class="youtube-marker" data-end="1535.52" data-start="1533.57" style="box-sizing: border-box;">as a product of your mind,<span style="color: #212529;"><span style="caret-color: rgb(33, 37, 41);"> </span></span></a><a class="youtube-marker" data-end="1538.163" data-start="1535.52" style="box-sizing: border-box;">even without an external challenge.</a></span><div><span style="font-family: georgia;"><br /></span><div><span style="font-family: georgia;">对,上面两件事,就完全是这种感觉。突然觉得自己很可笑,以前的自己很少担心,怕这怕那的,有什么问题,想办法解决就好了,绝不会还没出现问题就开始担心。上面的那些话语对我真的很有帮助。其实这两次担心焦虑的时候,也意识到自己不应该这样,但就是控制不住自己,老是要去想,真的有那种说的上瘾的感觉。不过,还好这次我真的吸取了教训,感觉想开许多,人也轻松了许多。</span></div><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;"> 这个星期,前两天,南航又给我发了个航变通知,这次是我回程从大阪起飞的飞机推迟55分钟起飞,也就是说,到了北京的大兴机场转机时间,只有40分钟,完全不够。这次我就没这么焦虑了,平静了许多。先是去查查有没有更便宜的可以替代的行程。结果是没有,于是我又给南航的国内客服打电话了。我这两个星期因为不舒服,大部分时间都在休息着,刷了很多小红书,虽然觉得浪费时间,但还是能学点新东西。上面有分享到遇到这种情况,除了免费退票,还可以让航空公司改到其他合作航空公司的航班,甚至整段都可以改。打通客服,讲明情况,客服给我查当天有没有什么可以替换的航班,因为我坚持要飞双流机场,所以可以选择替换转机的有国航和东航,但时间到成都又太晚,都半夜了。最后,给换成了南航在广州转机,比我原行程多了两个小时的航班。其实当时没考虑清楚,觉得换同一家方便,就很快换了。但后来想一想,我其实可以把全程换成国航的在北京转机的航班,这样还少一个小时。算了,不折腾了,也还算满意。现在已经买不到当初我买的便宜价钱了。我换后的同样航班,要将近400美金了。自我安慰后,很快就无所谓了。</span></div><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;"> 没想到,今早一起床,查email。又收到了国泰航空给我发来的航变通知,我也是服了,第一次买机票遇到这么多次航变。我回成都的机票虽然主承运人是BA,但香港飞成都这段是由国泰承运。本来是6月3日到香港后,晚上7点飞成都。结果国泰直接把这航班给取消了,给我改成了第二天上午的飞机。这样一来,我浪费了很多时间不说,还得花钱住酒店吃饭等。虽然我买的票是不能退的,但遇到这种情况就可以免费退票或者改航班。但现在要买到便宜合适的票已经不太可能了,就只好改改看。先联系国泰,因为我是在Expedia买的机票,并且主承运人是BA,让我联系他们。我以前以为找平台买机票的售后服务会很不靠谱,但这次我倒是一点都不慌,觉得应该会得到妥善处理的。于是我联系Expedia,又讲明了情况,告诉对方看能否给我换成合适的航班,就算早两天都没问题。没想到,客服给我找到早两天出发,从纽瓦克到伦敦行程不变,但伦敦到香港换成了国泰的班机。本来原行程要在英国转机将近12个小时,为了不浪费那么多时间,本来还打算去伦敦市区逛一逛的,但换后,变成了转机时间3个小时,比原来短了整整8个小时,对我来说是好事情啊。本来就不怎么想去伦敦市区的,去也是因为转机时间太长,这样一样,旅程缩短了很多,人也会轻松很多。而且到达成都的时间从原来的晚上将近11点,变成了中午12点左右,而且还早回去两天,怎么看都觉得不错。于是欣然接受这个调整,反而有种赚到了感觉。还有我相信应该不会再遇到航变了。</span></div><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;"> 经历这几次买票退票改票,我发现,其实一开始所有事情都挺顺利的,都是我自己在那里担心焦虑,给自己找罪受。还有,就算一开始出了点问题,如果平静积极地对待,绝大部分事情也会顺利地解决的。越是担心焦虑,反而越容易出错。人生不就是在不断遇到的问题和困难中不断成长起来的吗?</span></div><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;"> Eckhart讲到:<a class="youtube-marker" data-end="1201.98" data-start="1199.22" style="box-sizing: border-box;">Many forms of unhappiness can arise.</a></span></div><span style="font-family: georgia;"><a class="youtube-marker" data-end="1206.453" data-start="1201.98" style="box-sizing: border-box;">But when you look at them,<span style="color: #212529;"><span style="caret-color: rgb(33, 37, 41);"> </span></span></a><a class="youtube-marker" data-end="1212.06" data-start="1208.97" style="box-sizing: border-box;">you need a little bit of awareness to detect.</a><br style="box-sizing: border-box; caret-color: rgb(33, 37, 41); color: #212529;" /><br style="box-sizing: border-box; caret-color: rgb(33, 37, 41); color: #212529;" /><br /></span></div>All is Onehttp://www.blogger.com/profile/10321454216537147434noreply@blogger.com0tag:blogger.com,1999:blog-4855778566788380642.post-45573965945387105212023-05-15T12:23:00.001-04:002024-03-07T23:19:56.697-05:00果然,伤筋动骨一百天,不是一句玩笑话<p> 俗话说,伤筋动骨一百天。也就是说,伤筋动骨后,要好好修养至少100天。这句话,不但针对人类,对狗子们也是如此。我家狗子,八哥犬Coco,大概两个多星期前把左后腿给拉伤了。挺严重的,头两天,脚都不能站地。我本以为至少要15天才能有起色。结果狗子的恢复能力也是惊人,第五天就又可以跑跳了。但就是这种活蹦乱跳的行为,给我们造成了一种错觉,觉得狗子完全好了。所以,在上个星期三,带她去山里走了一个多小时的山路。这下就糟糕了,那天过后,就逐渐觉得她没什么精神,不想动。最开始也没想到是腿的问题。昨天,怎么看都觉得不对劲,后腿又跳不动了。今天更糟糕,刚才下地的时候,左后腿又有点瘸了。</p><p> 赶紧的,小推车拿出来。又得开始限制她活动了,上下楼梯,床和沙发完全靠抱。尽量不走动。早晚给擦50%的DSMO。等她开始恢复需要活蹦乱跳的精力后,可以少量的走走路。一个月后再带她出门走路,每次不超过15分钟。1个小时的山路就不要想了。而且她还很需要减肥。体重太重,腿脚的负荷也太大了。加油Coco,你很快又会好起来的。Mom这次一定会小心,不会再让你受伤了。好心疼。</p><div class="separator" style="clear: both; 这次再游泰国,已是12年以后。同游的,除了我先生,还多了俩精力旺盛的小朋友,哥哥Jack和妹妹Pearl。一家四口在五月底游泰国,和12年前的那一次蜜月旅行,又是另一番滋味。</div>

都说从5月底一直到8月,是泰国最热的雨季。我本来也有所担心,怕遇到每天都阴雨连绵。还专门从淘宝上买了几把雨伞带着。结果,幸运的是,去的10天,大部分的雨都是在晚上下的,白天就结束了。所以,雨伞用来遮阳占了大多数。这段时间泰国的阳光太厉害了,不打伞遮一下,会有一种被烤焦的感觉。</div>

出发前在网络上做了个大致的攻略,也收集了一些当地美食的信息。万能的淘宝,提供了很多便捷的服务。在淘宝上买了泰国的手机卡,便宜好用,不到30人民币,到了泰国本地,即插即用,包括通话和流量。还在上面订了清迈机场的接送机服务以及在清迈的一日游旅程,方便省心。</div>

5月24日回成都,在家里修整了两天,就从成都双流机场出发去清迈了。乘坐的是泰航经曼谷转机到清迈的班机。中间转机时间只有45分钟,的确很赶。泰航真心不错,飞机宽敞舒适,空中乘务员也温柔细心,提供的餐饮蛮可口的。今年四月才搭乘过美联航的客机,各种糟点,连座椅都因为没有买需要加钱的那种经济舱,而不能往后面放下,只能一路直挺挺地坐着。跟美联航一比,坐泰航经济舱可能都比美联航的商务舱舒服,除了座位窄小点。</div>

从成都飞往曼谷的飞机,到达曼谷机场晚了差不多半个小时。也就是说,如果飞清迈的飞机准时起飞的话,我们就已经晚了。那就惨了,因为当天这是泰航最后一班飞清迈的飞机了。下了飞机后,看到飞清迈的那班飞机还没登机。赶紧跑啊!一家人一路狂奔,跑到转机处过海关,结果在飞机上事先填好的出入境卡又填错了,得全部重填。昏死了!我和先生用最快的速度填好了四份入境卡,办好入境手续,过安检。又一路狂奔向登记口。还好转机的登机口不算远,入境和安检也比较快捷方便,从下飞机到转机登机口,也就20分钟的时间。</div>

都快跑到登机口了,我突然觉得有点不对劲,好像少了些什么。背上怎么凉凉的?我的背包呢?!完了,我背包忘在安检那里了!刚才太着急了。于是,我让先生和小朋友们先去登机口,我一路狂奔往回跑。跑了几分钟(居然不觉得累,要知道我跑步连一分钟都坚持不了的人),回到安检,安检那里已经有人等着我了。一位姑娘看到我一路跑来,问我,你是不是忘了一个背包?。。。是啊!!!。。。里面有什么?。。。ipad,相机。。。把ipad输入密码打开看看。。。好的。。。没问题,可以拿走了。。。太谢谢了!!!</div>

在登机口,等了20分钟,开始登机了。最后,终于坐上了即将飞往清迈的飞机。泰航这班飞机,感觉飞机是全新的,很漂亮。每个座位前的触摸屏,是我用过的最先进好用的。最贴心的是,每个座位前面的座位后面,有一个可以放下来的踏脚板,脚放在上面因为抬高,很舒服。机舱关掉大灯后,整个机舱点亮了有三种柔和色彩的背景灯(我现在只记得紫色的灯光),整个机舱被照得很漂亮,有一种在酒吧里的感觉。</div>

Colors COLOR CRAZE EXTREME SHINE GEL POLISH---CNP768 EnvyI bought this nail polish at the Family Dollar Store. They have a lot of choices of L.A. Colors nail polish. For only $2 a bottle, it works as good as my $7 Sally Hansen Miracle Gel Polish. It has the wide brush which I like, it's very easy to apply on the nails. It dries faster than regular nail polish.<br />

I got the clear one called Frosting, and I thought it was the top coat. But I was wrong, it was just clear nail polish. So I used my Sally Hansen Gel top coat, which worked out pretty well. It was shiny and so pretty. I got some other colors too, I will show them next time. For the price I paid, I am satisfied. I will buy more colors in the future.<br />

我今天照着一个recipe试着做了一下,这个recipe已经很不错了:<br />
材料:<br />
4 eggs <br />
2 cups heavy cream <br />
1/3 cup sugar <br />
1/3 cup brown sugar(我用的raw sugar代替) <br />
Whole vanilla bean (usually called Bourbon vanilla beans,我用1tsp vanilla extract代替) <br />
Small blowtorch (these can be found in hardware stores, or in gourmet kitchen stores) <br />
步骤: <br />

1. Slice vanilla bean lengthwise, scrape seeds and resin from half the bean, place in large sauce pan with the other half of the vanilla bean. <br />
2. Add heavy cream and scald (cook) on low heat until hot, but not boiling.<br />
3. While cream is warming, whisk egg yolks and sugar thoroughly.<br />
4. When cream is hot, ladle 1/2 cup into the yolks and sugar, mix. <br />
5. Then pour all the cream into the mixture.<br />
6. Mix, taking care not to whip air into the mixture.<br />
7. Pour through a strainer into a clean bowl.<br />
8. Remove bubbles (you have to see this).<br />
9. Place a wet towel on the bottom of a large shallow baking dish.<br />
10. Fill four ramekins almost to the top with the custard mixture.<br />
11. Place three ramekins in the baking dish. <br />
12. Add boiling water half way to the top of the baking dish, do not get water in ramekins.<br />
13. Add last ramekin.<br />
14. Bake 35 minutes at 325 degrees.<br />
15. Test for doneness by tapping the side of a ramekin. Custard should jiggle a bit. <br />
16. Chill ramekins for four hours.<br />
17. Remove from refrigerator, fill top of each with brown sugar.<br />
18. Place on a clean baking sheet.<br />
19. Use blowtorch to burn the sugar on top of each ramekin.<br />
20. Make sure no one makes off with your portion; this stuff is heaven on a spoon.<br />
21. Assign someone else to clean up the kitchen. <br />
按照以上步骤,我的ramekin和范例中的不一样,范例中用的是那种宽口浅底的,而我的是6oz圆口深底的,所以烤箱我开到325F用了32分钟,结果只有上面三分之一的custard凝固了,而剩余的部分还是很running,很明显我烤的时间不够,还有我的烤箱温度一直也不是很够。下次我试试325F45分钟,还不行的话,烤箱开到350F45分钟。还有就是开始煮heavy cream的时候,忘了把火开成小火,用最大的火烧的,这样很容易烧糊,而且我也没把heavy cream加热到应该到的临近沸点(在快煮沸的时候马上熄火),这也是做得不是很完美的原因之一吧。其他的步骤,我想应该八九不离十。 <br />
不过,最后,这成品的味道还是很好的,因为我又回炉烤了一会儿。总结了经验,下次会做得更好。 <br />

<br />All is Onehttp://www.blogger.com/profile/10321454216537147434noreply@blogger.com0tag:blogger.com,1999:blog-4855778566788380642.post-60082105459541373682011-02-15T20:35:00.001-05:002018-12-03T08:27:46.854-05:00美国人是这样吃排骨的美国人普遍长得壮,这是大家都知道的,当然这跟他们每天吃的东西是脱不了关系的。最初到美,发现原来美国超市里也有排骨卖,很是兴奋。这里的排骨那个便宜啊,肉那个多啊,基本上都属于我们那里的肉排骨。这里的排骨分两种,一种是前肋骨,便宜点,我们镇上平时基本上是2刀一磅,有时候打折到1.5刀一磅,还有种是更优秀的后肋骨,肉更嫩更厚实,在我们常去的会员超市大部分时间是3刀一磅。不过这里的排骨都是整排卖的,除非你在中国超市买,那里能买到切成了块的,不过在美国超市里就没有切成块里,只好买回家自己宰,超级锻炼臂力和手臂肌肉哈。<br />
那没切成块,美国人平时是咋个吃他们的排骨的呢?原来,不像我们,排骨有多种用途,用来烧,卤,烤,煮汤,炸,等等。。。他们就主要基本上一种吃法,拿来整排烧烤,就是我们常说的BBQ,用烧烤酱来烤。如果烤的入味又嫩,味道还是不错的,就是吃多了有点腻人。我们夏天比较常吃这道菜,因为经常在屋外用烧烤炉烤着吃。<br />
在餐馆里,一般是半排和整排两个选择,下面的片片就是我有次点的整排后背肋骨,一排就有将近3磅重,这个分量,吃了人咋个不结实嘛。<br />

不过,有一个例外,就是每次去专门的全美连锁汉堡包餐厅,Fuddruckers,我还专点他家的汉堡包吃。在美国,hamburger指的就是夹牛肉饼的那种,其他夹什么鸡肉啊什么的,都叫三明治。这家店用的是真正的牛肉馅儿,感觉属于质量比较好的那种,不像某些连锁快餐店,那个牛肉饼煎得又老又难吃,那牛肉馅儿也感觉很不正宗。他家的牛肉汉堡,你可以选择你牛肉饼的生熟程度,我爱吃五分熟的,这样牛肉饼很嫩,很多汁。牛肉汉堡中的牛肉,选择从1/3磅,1/2磅,2/3磅到最猛的1磅。我最多就只吃过半磅的那种,已经够多了,再加上无限量的炸土豆条,和饮料,外加你可以自己给汉堡加各种配料,什么生菜啊,番茄啊,酸黄瓜啊,洋葱啊。。。还有各种各样的酱料,如番茄酱,美乃滋等,这些都是无限量自助的。总之,最后,绝对让你撑得不行。<br />

可惜,我住的小镇周边都没有这家餐厅,所以每次都是顺路经过某地,有的话,就去吃了。星期五,我们从新泽西的机场回家,刚好离机场大概半个小时路程的某地有一家,我们正好在那里解决了我们全家的晚饭。<br />

店里有促销,25美金的全家四口套餐,包括两个大人的半磅的汉堡套餐,可以从各种特别汉堡中任选一种,外加coleslaw等配菜,无限量的炸土豆条和饮料。两个小孩的儿童套餐,从几种儿童套餐里任选两种,也有配菜和无限量的炸土豆条和饮料。<br />
我点的那种汉堡,很大只,基本上是国内吃的M记的巨无霸汉堡的两倍大,很厚的一层肉饼,不过名字我记不住了。<br />

今天,突然看到一个方子,叫summer corn tomato salad,看着很简单,正好需要的材料我手头有现成的,就弄了一盆来尝尝,味道还真不错,很新鲜的感觉,特别适合在夏天配合着那些油腻的烤肉什么的吃。<br />
需要的材料有这些:<br />
玉米(我用的冰冻的超甜玉米,本来就是熟的,省事)、番茄、红洋葱、大蒜、新鲜的basil,新鲜的香菜(没有,这次就没放)、葱、balsamic vinegar,黑胡椒、盐、橄榄油(没有就用花生油代替了)、Dijon mustard。<br />
用量嘛,除了玉米粒和番茄是主料外,其他都是配料,按自己的口味酌量添加就行了,我也没有按照那个方子的用量来,拌好了自己尝尝,按自己的口味觉得好吃就行了。<br />
成品是这样的,看着色彩丰富,还是让人很有胃口的,味道嘛,酸酸甜甜,很是赶口,一盆很快就见底了。<br />

前两天,到超市里买齐了方子需要的原材料。今天,趁着天气还算暖和,就试着做做了。方子是借鉴最有名的妃娟的100%中种法。可是,由于妃娟是台湾人,所以计量单位是以公制g为主,而我在美国,大部分都用cup啊,tsp什么的。所以,我把这方子给转换成了方便在美国用的计量单位,材料也翻成了美国这里的名称。<br />
借鉴和转换的方子如下:<br />
材料可做12两土司模x2=24两土司模一个(美国这里没有12两土司模之说,应该用那种一磅的商业用loaf pan就基本上一样了。我这次做没有,我的loaf pan有点大了,做出来模样怪怪的。)<br />
材料:<br />
A:高筋面粉bread flour: 500g(1cup高筋面粉=140g,我那天换算错了,弄成120克,结果面粉又多给了90克,失败中的失败!这样算下来应该是3cup+1/2cup+10g,还真复杂,所以前几天去弄了个电子称,精确到克的,我还是用克来计量算了。)<br />

细砂糖 sugar: 1tbsp+1/2tsp+1/8tsp 15g <br />
速溶酵母 instant yeast: 1tsp 3g<br />
鲜奶 milk:1/2C+3tbsp+1tsp 160g<br />
动物性鲜奶油 heavy cream: 1/2C+2tbsp 140g<br />
蛋白 egg white:1个 (medium or large)35g<br />
奶油 butter(unsalted):2tsp(1tbsp)10g<br />
B:蛋白 egg white:1个 40g<br />
sugar:6tbsp 75g<br />
盐 salt:1tsp+1/5tsp 6g<br />
instant yeast:2/3 tsp 2g<br />
奶粉:30g<br />
C: butter:2tsp(1tbsp)10g<br />
做法:<br />
1、第一次搅拌:将材料A倒入缸类搅打至成团即可,在27C(80F)中第一次发酵2.5至3小时。<br />
2、第二次搅拌:将发好的A材料加B材料搅打至有Q性,再加入C料将面团搅打至出现薄膜即可。<br />
3、延续发酵10分钟。<br />
4、分割,滚圆再松弛15分钟<br />
5、杆卷入模(一次杆卷成品组织较松软,二次成品组织较细棉)。<br />
6、最后发酵至7.5至8分满,入烤炉。(我刷了蛋液)<br />
7、带盖 350F 35分钟(我烤多了至少4分钟,结果皮厚,都有点糊了,失败,下次一定注意把握好时间)。时间视自己的烤箱和模具情况自行调整。(新买的不粘土司模说是要比方子上的温度低25F来烤,下次我就试试325F35分钟)。<br />
注:不带盖的,面包上色后,盖上锡箔纸,颜色就不会太深。<br />

总的来说成品口感还不错,内部组织很细软湿润,但由于我多烤了几分钟,外壳太厚太硬,都有点糊了,失败!当然对内部组织也有影响,下次一定要注意了!!!其他的步骤还算没什么失误,当然能用那种商业用的一磅土司模就更好了,我要去败两个。<br />
